They say one’s birthday is a Special Occasion because you get to Thank God for the Countless Blessings He’s showered on you throughout your past years and to look forward to many more in the years ahead.
To celebrate 35 years of God’s Faithfulness in my life, I decided to visit Kava by Fairfield, Marriott yet again to be wowed by their impeccable service and delicious food prepared by my dear friend Chef Mallesh Doddla under the able guidance of Executive Chef Sudhir Nair.

Grilled Asparagus with compressed watermelon salad (Chef’s Special Salad) – A delicious preparation of Grilled Asparagus with Cheese and Compressed Watermelon Blocks.
ClayPot Prawn, Avocado and Ripped Mango with Mint Balsamic Chutney – Grilled Prawns on an Avocado and Mango Base with Mint Balsamic Chutney.
Mushroom and Spinach Stuffed Chicken Tangdi – Chicken Tangdi (Leg piece marinated with spices) stuffed with Mushroom and Spinach.
Ripped Banana Tiki and Red Onion with Balsamic Reduction – Smashed banana with red onion made into a flat patty and fried.
Blackened Chicken Fried Rice – Fried Rice with Chicken and Egg served with Mint Chutney.
Dahi Tikki and Papdi Chaat – Local Chaats.
Refreshing Vasata Neer (Hyderabad special) – A preparation of Tender Coconut Water and Lime Juice.
Chilli Chocolate Mousse – A Recipe from MasterChef Sarah Todd’s Collection titled “Sugar and Spice”, this is a Chocolate Mousse with infused Chilli in it and a Coffee Macaroon on top.
Indian Mysore Pak – Indian Sweets neatly garnished with finely chopped Pistachio flakes.
To mark the Occasion, Chef Mallesh brought over his Chefs from the Kitchen and a Delectable Mouth-Watering Cheese Cake. They all sang the song “Happy Birthday” and then Chef Mallesh fed me the Cake.
This was truly a memorable occasion, one that I would cherish for years to come. We also had a nice conversation with Chef Sudhir. Thank you, Chefs and team, for making me have a memorable Birthday.
